Celaya, Mexico is the third largest city in the state of Guanajuato, Mexico. Celaya is famous for a Mexican confection of thickened syrup that is made of sweetened caramelized milk. This syrup is named cajeta after the Spanish phrase "al punto de cajeta", which means a liquid thickened to the point at which a spoon drawn through it reveals the bottom of the pot in which it is being cooked.
